don’t worry, I won’t talk your ear off here and give you my whole life story in this recipe intro – I always hit “jump to recipe” for that reason. these black bean burritos are one of the easiest meal preppable things you can make while being healthy, budget friendly, and tasty! feel free to make swaps if something doesn’t suit your tastes but heres what works for me 🙂


ingredients:
-3 cans of black beans drained and rinsed
-3 bell peppers (I prefer using green, but red yellow or orange works too)
-1 large yellow, white, or spanish onion
-1/3 cup salsa
-taco seasoning measured to your taste (I buy premixed, if you want to make from scratch add chili powder, garlic, salt, pepper, turmeric, cayanne, and cumin together)
-1-2 tablespoons of nutritional yeast (optional)
in a large frying pan saute finely chopped bell peppers and onions with a small splash of oil until softened
Add salsa, black beans, and seasonings, then using either a potato masher or fork, mix everything together until well combined & cook through – you can choose your desired consistancy (I prefer about half the beans to be mashed to leave some texture)
serve wrapped in tortillas with your favourite toppings!
to take these to the next level, once they are loaded into a tortilla I pop them into my air fryer to crisp up a bit – i’d recommend 400f for about 3-5 or until golden. this will make decent amount of filling that can last us a few dinners through the week, Im sure you could even freeze your burritos and reheat easily!
